“What I’ve Baked Recently”

I haven’t really ventured far afield in the kitchen in a while. The last time I baked, it was brownies. A simple powder mix, eggs, oil, and water. The whole thing is done in a matter of minutes. Challenges are good, but we can’t be brilliant all the time. Sometimes things should be simple, and easy, and good. A few common ingredients, stirred and folded with a spoon, and the batter’s ready. It’s too thick to move like water. Tip the spoon and it clings, but falls.

When I put it in the pan the batter looked so meager and shallow,

But I followed the recipe, and I should continue, I told myself. So into the oven it went, and in due time the batter had risen, and formed a thin shiny shell, like ice over snow in winter. My spatula broke through like a ship at arctic sea, and the fragments gathered and ground down before the prow.

The first one was the hardest to remove, as it always is. Once the first row is out the rest leave in twos and threes. The box says it makes 18, but no one’s around, so I’ll take two and say the box was wrong. All cut and stacked, who can tell if it adds up or not.
